Strawberry Agua Fresca

Agua De Fresa, or Strawberry Water, is a classic Mexican drink that has become popular all over the world. This refreshing drink is made by blending fresh ripe strawberries and a touch of sugar, making it the perfect beverage to quench your thirst on a spring or summer day.

I’ve been hard at work in the kitchen trying to perfect the basic strawberry agua fresca recipe. This might sound strange, but I’ve become an agua fresca snob and I’m not mad about it.

I mean, just look at how delicious my top five agua frescas are: 1. The Classic Horchata 2. Agua De Tamarindo, 3. Pineapple Water, 4. Agua De Jamaica and 5. Watermelon Agua Fresca.

Ingredients

Making Agua De Fresca is incredibly simple and requires only 3 ingredients. Here’s what you’ll need:

  • Fresh and ripe strawberries. You can use frozen strawberries if fresh are not in season yet.
  • The juice of 1 lime. This brings brightness and balance to the drink.
  • Simple syrup to sweeten the drink. I find that using simple syrup (versus granulated sugar), provides a better sweetened drink. Granulated sugar does not dissolve as well and sometimes you end up using more in order to get the perfect sweet flavor.

How to Make Agua De Fresa

  1. Start by rinsing the strawberries until cold water. Then remove the green tops and slice into quarters (this will help the blending process).

  1. Add the strawberries with 2 cups of water.

  1. Blend until you reach a smoothie consistency. About 2 minutes.

  1. Transfer the pureed strawberries to a large jar or a pitcher and add the rest lime juice and simple syrup. Stir the mixture to incorporate well.

Slice 4 ounces of the strawberries into small cubes and set aside in the refrigerator for garnishing

I like to add the simple syrup after the lime so that I can taste for the sweetness little by little. Add as much or as little you want according to taste!

  1. Lastly, refrigerate for at least one hour. Pour over ice cubes and garnish with chopped strawberries.


Tips and Notes

  • The proportions of water to sugar, are completely a matter of taste,
  • I don’t strain the pulp as I like the consistency and texture the little seeds give to the drink. However, you’re more than welcome to do so by passing it thru a fine mesh strainer.
  • For best taste: Drink this agua de fresas within 2-3 days after it is made.
  • Variations: you can add chia seeds, add other types of berries, sweeten with stevia, agave nectar, honey or monk fruit instead. The possibilities are endless!

How to Store

  • Fridge: Fresh strawberry water should be stored in an airtight container, such as a glass jar or plastic bottle, and refrigerated immediately after it is made. The container should be tightly sealed to prevent air from entering, which can cause the juice to spoil more quickly.
  • Freezer: Use a freezer-safe container like a plastic jug. It’s important to leave some space at the top of the container as the juice will expand when it freezes.
  • Defrosting: When you’re ready to use the frozen strawberry water, simply remove it from the freezer and let it thaw in the fridge overnight. Alternatively, you can also thaw it at room temperature for a few hours.

  • 1 pound fresh strawberries, plus more for garnish rinsed, stems removed and sliced into quarters
  • 1 lime, juiced
  • ¾ cup Simple syrup or more according to taste
  • Ice for serving

Instructions

  • Rinse the strawberries, remove the green tops and cut into quarters.
  • Add the strawberries with 2 cups water. Puree until you reach a smoothie consistency. About 2 minutes.
    1 pound fresh strawberries, plus more for garnish
  • Transfer the pureed strawberries to a large jar and add the rest lime juice and simple syrup.
    ¾ cup Simple syrup or more according to taste, 1 lime, juiced
  • Refrigerate for at least one hour.
  • Slice 4 ounces of the strawberries into small cubes and set aside in the refrigerator for garnishing
