Have you heard of summer blues? Yeah, that’s what I had this weekend. Most people only talk about winter blues but us unlucky souls that live in a place that is hotter than hell suffer from summer blues. You can’t go anywhere during the day since doing so will give you second degree sunburns in 5 minutes. We reached 119 degrees on Saturday. The hottest weekend (so far) of the year in Phoenix. This hot weather we usually expect until late July or August but in June? This is way too early! What can we expect the rest of the year?
Saturday was the laziest day my hubby and I had in a while…. we did nothing! We just stayed indoors moving very slowly, watching TV and surfing the net. The heat sucked the life out of us! Yes, it is possible. By night I did manage to get some energy back and make these yummy popsicles. Only 3 ingredients! I used honey as sweetener but I’m sure that using a natural non-calorie sweetener would work perfect as well.
If you’re one of the lucky people that have beautiful weather during the summer please enjoy the outdoors for me. Go to a picnic, sit outside on the porch drinking sweet tea, take a bike ride, go rollerblading, go to a farmer’s market, decorate your backyard beautifully and host a barbecue party. These are the things I wish I could do right now…. but don’t feel sorry for me. I’ll be doing these things again starting in October 😀
Strawberry Pinneapple Popsicles
- Prep Time: 15 mins
- Cook Time: 4 hours
- Total Time: 4 hours 15 mins
- Yield: 8 1x
- 1 heaping cup fresh strawberries, chopped
- 1 6 oz can pineapple juice
- 2–3 Tbsp honey (depending how sweet you want the mix)
- Blend your ingredients in a blender and pour the mixture into popsicle trays. Freeze for 3 to 4 hours or until the pop is frozen solid.
