Authentic Recipe for Red Chilaquiles

Ingredients for sauce: * Dried Chile De Arbol * Dried guajillos peppers * Tomatoes * Onion & garlic * Spices

In a medium saucepan, cook the chiles, tomatoes, onion & garlic.


Meanwhile, toast the arbol chile & guajillos for about 45 seconds oneach side

Blend the chiles, tomatoes, onion, garlic plus all of the spices.

Cook the sauce a little longer in a large skillet and add tortilla chips.

Mix everything until the chips are covered in sauce.

Top with queso fresco, crema, avocados and serve with beans.

You can also top it with a fried egg.  It's the perfect brunch and very popular dish in Mexico. Enjoy!
