Ensalada De Huevo

What you need:

Hard boiled eggs, celery

Part-skim ricotta cheese and low fat cottage cheese

Kosher salt & fresh pepper, fresh thyme chive

To serve: tostadas, saltines or over toast

Pickled jalapeños and some of its juice

Start by making the hard-boiled eggs. Then peel and chop into small pieces.

Boil

In a medium bowl, place all of the ingredients. Using a fork or spatula, mix everything until combined.

Mix everything and taste for salt & fresh pepper. Adjust according to taste.

Serve ensalada de huevo over tostadas, toast, on a bed of crisp lettuce leaves or as a side dish for your favorite main dish.
