Peanut Butter & Chocolate Oat Bars

Ingredients

  • 1 cup peanut butter
  • 1/4 cup butter
  • 3 large eggs
  • 1 1/2 cup granulated sugar I used 1 cup regular sugar + 1/2 cup stevia
  • 1 tablespoon vanilla
  • 2 cups all-purpose flour
  • 1 cup old fashioned oats
  • 1 1/2 cup teaspoon baking powder
  • 1 teaspoon sea salt
  • 1 1/2 cups chocolate chips

Instructions

  • Preheat oven to 350 degrees. Line a 9x11 pan with aluminum foil leaving an overhang on opposite sides to lift the bars out. Grease lightly with cooking spray. Set aside.
  • Using a mixer, cream together the peanut butter and butter. Add the eggs, vanilla and sugar. Mix well.
  • In a separate bowl, combine the dry ingredients; flour, oats baking soda, baking powder and salt.
  • Add the dry mixture to the wet mixture and combine until all is mixed well.
  • Fold the chocolate chips.
  • Press the mixture into the bottom of the prepared pan
  • Bake for 15 to 20 minutes or until time is lightly browned. Mine took 20 minutes.
  • Allow to ool in pan completely before removing and cutting into squares.
