Make this healthy Greek Yogurt Parfait made with lime zest and your favorite sweetener then layered with kiwi and granola. A delicious breakfast ready in 10 minutes or less!
3ripe kiwis or your favorite berriespeeled and diced
1cupnonfat plain Greek yogurt (227 grams)
¼teaspoonlime zest
1tablespoonhoney or preferred sweetener
granola
Mint sprigs for garnish. Optional.
Instructions
Start by prepping the fresh fruit by cutting it into small bite pieces.
In a blender, puree half the diced kiwi or fresh fruit and set aside.
In a small bowl, mix the nonfat Greek yogurt, lime zest, and honey.
Fold the pureed kiwi/fruit into the yogurt mix.
Layer the yogurt, granola and remaining diced kiwi or fresh fruit in small glasses or mason jars. Then sprinkle a little chopped mint on top of each fresh fruit layer.
Add more fresh fruit for the last layer and serve immediately.
