Greek Yogurt Parfait Recipe

Make this healthy Greek Yogurt Parfait made with lime zest and your favorite sweetener then layered with kiwi and granola. A delicious breakfast ready in 10 minutes or less!

Ingredients

  • 3 ripe kiwis or your favorite berries peeled and diced
  • 1 cup nonfat plain Greek yogurt (227 grams)
  • ¼ teaspoon lime zest
  • 1 tablespoon honey or preferred sweetener
  • granola
  • Mint sprigs for garnish. Optional.

Instructions

  • Start by prepping the fresh fruit by cutting it into small bite pieces.
  • In a blender, puree half the diced kiwi or fresh fruit and set aside.
  • In a small bowl, mix the nonfat Greek yogurt, lime zest, and honey.
  • Fold the pureed kiwi/fruit into the yogurt mix.
  • Layer the yogurt, granola and remaining diced kiwi or fresh fruit in small glasses or mason jars. Then sprinkle a little chopped mint on top of each fresh fruit layer.
  • Add more fresh fruit for the last layer and serve immediately.
