Mexican Beef Tenderloin

What you need:

Beef tenderloin, red and yellow bell peppers

Red onions, Roma tomatoes

Minced garlic, avocado oil

Spices: chili powder, dried oregano, ground cumin, kosher salt and black pepper

Heat the oil over medium-high heat. Add the beef and sear for 2-3 minutes. Remove beef to a plate and set aside.

Add peppers, onion, and garlic and stir for about 2 to 3 minutes until just tender.

Add tomatoes and beef back to skillet and cook for 1 to 2 minutes.
