What you need:
Fish, potatoes cambray, onion, red and green bell pepper
Yellow Mexican pepper, garlic clove & tomatoes
Dried thyme, oregano, garlic powder, bay leaves, salt & pepper
Olive oil, capers, green olives, tomaot sauce, fish or veggie stock

Season with salt and pepper both sides of the fish.

In a large skillet or wide pot, add the oil and add the peppers and onions and saute for 2 minutes. Add the garlic and saute until soft and fragrant.

Add the tomatoes, capers, olives and tomato sauce. Cook for 2 minutes.

Add the dried herbs, fish stock and potatoes. Mix all ingredients well.
