Ingredients

  • 2.5 cups cucumber (1 large cucumber) peeled, seeded and diced
  • 1 cup mango (1 large mango) diced
  • ½ cup red onion finely chopped
  • 1 habanero chile (optional) chopped
  • 2 Tbsp fresh lime juice
  • 2 Tbsp orange juice
  • kosher salt to taste
  • 1 fresh jalapeño finely chopped

Instructions

  • Dice the ripe mangoes and cucumber into uniform pieces. Finely chop the red onion and mince the jalapeño pepper, ensuring to remove the seeds to control the heat level.
  • Squeeze the lime juice and add the orange juice. Finally, season with salt according to taste.
  • Refrigerate until ready to use.
