This Mango & Cucumber Salsa goes perfect with anything! It's a light and refreshing alternative to the usual tomato or chile based salsa. You can't stop eating it once you start!
2.5cupscucumber (1 large cucumber)peeled, seeded and diced
1 cupmango (1 large mango)diced
½cupred onionfinely chopped
1 habanero chile (optional)chopped
2Tbspfresh lime juice
2Tbsporange juice
kosher salt to taste
1fresh jalapeñofinely chopped
Instructions
Dice the ripe mangoes and cucumber into uniform pieces. Finely chop the red onion and mince the jalapeño pepper, ensuring to remove the seeds to control the heat level.
Squeeze the lime juice and add the orange juice. Finally, season with salt according to taste.
