Cook the potatoes in a small skillet on medium heat. Keep stirring to ensure that the potatoes are cooked even.
Sauté the ground beef and the garlic salt. When the meat is 3/4 cooked, add the onions and poblano pepper. Add the chopped tomato, tomato sauce, broth salt & pepper.
Add the frozen peas and corn kernels. Mix to integrate. Add the crispy potatoes and mix to integrate. Season with salt and pepper according to taste.
