Ingredients

The Vinaigrette

  • ¼ cup fresh lime juice (2 juicy limes)
  • 2 Tablespoons honey
  • ¾ teaspoon Dijon mustard (or regular mustard)
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground cumin optional
  • ¼ cup extra virgin olive oil

The Salad

  • 2 English cucumbers thinly sliced
  • ½ large red onion thinly sliced
  • ½ avocado (optional) thinly sliced
  • Crumbled Queso Fresco optional

Instructions

Make the Honey-Lime Vinaigrette

  • Blend lime juice, honey, mustard, garlic powder, salt, black pepper, and cumin together in a bowl; stream olive oil into lime juice mixture while whisking until well combined. (It makes about 1 cup)

Make the salad

  • In a large bowl, add the cucumber and onion with ½ cup of the dressing. Add the chopped avocado, add crumbled queso fresco if desired. Enjoy!
