This Mexican Cucumber Salad combines cucumbers, red onions & avocado then drizzled with a Honey-Lime Vinaigrette. It’s super easy to make salad, and if you pre-make the dressing, and crumbled queso fresco, it’s ready in just ten minutes.

This refreshing cucumber salad is quickly becoming a favorite for all kinds of meals!

Enjoying it year-round is a great idea because cucumbers are widely available throughout the year, making it an accessible and versatile option. The salad is light, refreshing, and packed with hydration, which makes it perfect for warm days but also a healthy complement to heavier meals during colder months.

Ingredients notes:

  • Cucumbers: I like to use English cucumbers for this salad, which are the long cucumbers wrapped in plastic.
  • Red onions and avocados
  • Crumbled Queso Fresco as an option or your favorite cheese.
  • Honey vinaigrette dressing (steps below)

How To Make It

First start by making the dressing. Blend lime juice, honey, mustard, garlic powder, salt, black pepper, and cumin (if using) together in a bowl; stream olive oil into lime juice mixture while whisking until well combined.

In a large bowl, add the cucumber and onion with ½ cup of the dressing. Add the chopped avocado, add crumbled queso fresco if desired. Enjoy!

Tips and Notes

  • Use a sharp knife or a mandoline to get super thin slices of cucumber and red onion.
  • Use firm, fresh cucumbers: Choose cucumbers that are crisp and free from soft spots for the best texture in your salad. Persian or English cucumbers work particularly well since they have fewer seeds and thinner skins.
  • Add the dressing just before serving: If making the salad ahead, store the cucumbers and dressing separately. Combine them shortly before serving to keep the cucumbers crunchy and the flavors fresh.

Make Ahead?

Yes! Just prepare this salad one day in advance (no more than that) Store it in an airtight container in the refrigerator. Keep in mind that the cucumbers will release some liquid over time, so the dressing may become slightly watery by the next day.

Ingredients 

The Vinaigrette

  • ¼ cup fresh lime juice (2 juicy limes)
  • 2 Tablespoons honey
  • ¾ teaspoon Dijon mustard (or regular mustard)
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground cumin - optional
  • ¼ cup extra virgin olive oil

The Salad

  • 2 English cucumbers - thinly sliced
  • ½ large red onion - thinly sliced
  • ½ avocado (optional) - thinly sliced
  • Crumbled Queso Fresco - optional

Instructions

Make the Honey-Lime Vinaigrette

  • Blend lime juice, honey, mustard, garlic powder, salt, black pepper, and cumin together in a bowl; stream olive oil into lime juice mixture while whisking until well combined. (It makes about 1 cup)

    I’m making this today; I know it will be ⭐️⭐️⭐️⭐️⭐️. ? You indicate to add 1/2 c of the dressing, but you say the recipe makes about 1 cup, but I don’t see where you address the other 1/2 c. Did I miss something?
