I rounded up some of my favorite healthy Mexican recipes that not only taste good, but are all low-calorie, made with fresh ingredients, and are easy enough for you to whip up right at home. I didn't even include my collection of salsas that are always healthy like my Salsa Mexicana & Chile Guajillo.
I think it's safe to say that Mexican food is on everyone's list of favorite foods. But unfortunately, it has gotten a bad rap due to how it's prepared in the United States and other parts of the world.

Low calorie & healthy Mexican food is possible if you just stay away from frying it (like these baked tortilla chips) or loading them with cheese! All you need to create delicious & healthy dishes are lots of veggies, fresh spices and lean meats.
