You’re in for a treat with this delicious Choriqueso dip! Flavorful chorizo loaded with melting cheese then baked to perfection. Perfect for sharing and enjoying with your favorite corn tortilla chips.

Please stop everything you’re doing – may I present to you…. Choriqueso! This insanely incredible / decadent / mind blowing chorizo & melted cheese goodness will be your favorite as soon as you try it!
All you need for this chorizo and queso dip is your favorite chorizo or soyrizo and a good melting cheese such as Oaxaca, Chihuahua or Mozzarella plus onions, tomatoes & jalapeños. I prefer to use my homemade chorizo as it has less fat and make it with quality ingredients only.
Seriously guys, make this for your next guest and they will be impressed! The recipe is meant to serve 4 to 6 as an appetizer, but my husband and I took it down all my ourselves for dinner one night, it’s that good. We won’t judge if you do too 😉

Make Choriqueso (Step by Step)

- In a skillet over medium heat, cook the chorizo, breaking it apart with a wooden spoon or spatula as it cooks, until it’s browned and halfway cooked through.
- Add the chopped onion to the skillet. Sauté them with the chorizo until the onion is translucent and chorizo is cooked through.
- Add the roasted pepper and tomatoes. Stir everything together and let it simmer for about 5 minutes, allowing the flavors to meld.

- In a 6-inch ovenproof baking dish, layer half of the cheese evenly on the bottom. Top with a layer of the chorizo mixture, then the rest of the cheese.

- Set the dish on a baking sheet and bake until the cheese is completely melted and bubbling around the edges, about 10 minutes.
- Remove and garnish with cilantro leaves. Serve immediately with chips or tortillas for dipping.

How to Store
To store this recipe, I usually transfer the remaining leftovers to an air-tight container. Then, when you’re ready to reheat these leftovers, you can pop it in the microwave until warm, or if you prefer, you can place it in the oven at a low temperature for a few minutes and serve as needed.
Tips & Tricks
- If you use store bought chorizo, drain the fat first prior to adding the cheese.
- Don’t forget your cilantro!: Topping this recipe with fresh cilantro is key to bringing all the flavors together. Plus, who doesn’t love to see that pop of color?!
- Serve with tortilla chips: Serve with tortilla chips as an appetizer. Looking to use this as a side dish alongside your main course? Serve on as a taco with warm corn or flour tortillas. So delish!

Ingredients
- 8 ounces Chorizo (see note)
- ½ small onion (white or yellow) - chopped
- 1 medium tomato - chopped
- 1 roasted poblano pepper (or roasted bell pepper) - chopped

- warm soft corn tortillas or tortilla chips for serving

Delicious however I modified it a little by seasoning my chorizo with salt pepper garlic salt and using red onion instead of yellow or white. Still turned out amazing will definitely be making again I was worried that the cheese might stick to the bottom but it was just fine no sticking at all
