This Corn & Avocado Salsa is absolutely delicious! It tastes so fresh plus it goes perfect on seafood tacos, served with chips or as a topping for grilled dishes. So good!

This Mexican Corn Salsa is a delicious change from regular salsa or Pico de Gallo. It will be a hit next time you serve it.

It’s the perfect summery salsa with very few ingredients – corn, buttery avocado, fresh tomato, a little onion, garlic powder and fresh lime juice plus salt & pepper.

If you notice there are NO peppers whatsoever! No jalapeños, no serranos, nada. Perfect for those that prefer mild salsas over the spicy ones, however, this salsa is still packed with flavors! 

Also, do you noticed that it does not have any cilantro? On rare occasions I like to make salsas with no cilantro…. and I adore cilantro!

A note regarding the frozen corn: I like to use roasted frozen corn so if you can find it, I would recommend you get it! It gives any dish an extra deep & intense flavor that is worth going the extra mile just to get it. I get mine at Trader Joe’s. But don’t worry if you can’t find roasted frozen corn, this salsa will still be amazing with regular frozen corn.

How To Make Corn & Avocado Salsa

We start by defrosting the corn and chopping the onions and avocados. This takes approximately 5 minutes, depending on your ninja-level mastery of chopping veggies.

Then mix everything together in a medium size bowl and taste for salt & pepper. Oh, hey! You’re done!

Keep in the fridge until ready to eat so that it’s nice and cold when you serve it.

Serving Suggestions

This salsa was part of my Blackened Salmon Tacos recipe but it is so good that I decided to make it the start on its own post. I make these tacos often for the hubby and I plus when friends visit us.

It also goes great with grilled chicken, baked fish and even a steak!

Ingredients 

  • cup frozen corn - thawed
  • 1 medium avocado - diced
  • 1 medium roma tomato - diced
  • 2 tablespoons finely chopped yellow or white onion
  • 2 teaspoons fresh lime juice
  • ¼ teaspoon granulated garlic
  • Salt and Pepper to taste

Instructions

  • Combine all ingredients in a mixing bowl and place in refrigerator until ready to serve.

    This is such a delicious recipe. I’ve always said that you don’t need a ton of complicated ingredients for delicious food, and this really does prove that.
