- Add the chopped onion and jalapeños to the skillet and cook for 2 minutes, stirring occasionally.

- Add the crumbled chorizo to the skillet and cook, stirring occasionally, for about 5 minutes until browned and cooked through.

- Crack the eggs into a bowl, season with salt and pepper. Whisk with a fork until creamy.

- Add the whisked eggs into the skillet, and stir gently to mix with the chorizo.

- Cook for about 2-3 minutes, or until the eggs are set to your liking.

- Now they’re ready to be served! Serve while hot with tortillas and beans on the side.

Tips and Notes
- Use a nonstick pan: To prevent the eggs from sticking to the pan, make sure to use a high-quality nonstick pan. It also helps reduce the amount of oil in a recipe.
- Use a silicone or wood spatula: A silicone spatula works great to sweep the eggs as they cook. A flat wooden spoon works great too though!
- Don’t overcook your eggs! The eggs are done when they are no longer liquid, the curds are large and clumped together, but they still glisten with a little moisture.
- You may adjust the number of eggs and the amount of chorizo depending on preference.
Variations
- If time allows, I like to make crispy potatoes in the airfryer or in a skillet. Then I add them before I add the eggs to the chorizo.

- You can also freeze chorizo con huevos. You can make burritos and freeze to eat on the go! Defrost overnight in the refrigerator and heat in the microwave for a minute at the time until heated thru.

Serving Suggestions
To make chorizo con huevos a full meal, serve it with a side of refried beans and either warm corn tortillas or flour tortillas. Even though it already has veggies, topping it with a good salsa will be the perfect touch!
