Say Something Clever

Portrait of Ana Frias

Today I have for you this delicious recipe for Huevos Con Chorizo (scrambled eggs and Mexican chorizo).

As many of you may know, breakfast has always been my thing, mostly because I love eggs! This is one of my favorite dishes to make since it’s easy and always so satisfying.

It’s good to have ready made chorizo in the freezer for those days that you get the craving for a hearty breakfast. For a vegetarian option, make it with Soy Chorizo.

Using homemade lean beef chorizo lets you control the fat content, and when combined with eggs, you get a hearty, satisfying meal. Make a batch to stash in the fridge or freezer—wrap burritos or tacos in foil, then just heat them up in the microwave (and crisp them up in the toaster oven if you’re feeling fancy). This quick-cooking recipe makes mornings a whole lot easier!

🩷 xoxo, Ana

Here is a list of the main ingredients you’ll need for this breakfast:

  • Eggs
  • Vegetables: Chopped onions and jalapeños. If you like things spicy you may add a serrano pepper. Like it mild? Add Anaheim pepper or even bell pepper will work.

Tips and Notes

  • Use a nonstick pan: To prevent the eggs from sticking to the pan, make sure to use a high-quality nonstick pan. It also helps reduce the amount of oil in a recipe.
  • Use a silicone or wood spatula: A silicone spatula works great to sweep the eggs as they cook. A flat wooden spoon works great too though!
  • Don’t overcook your eggs! The eggs are done when they are no longer liquid, the curds are large and clumped together, but they still glisten with a little moisture.
  • You may adjust the number of eggs and the amount of chorizo depending on preference.

Variations

  • If time allows, I like to make crispy potatoes in the airfryer or in a skillet. Then I add them before I add the eggs to the chorizo.
  • Make it vegan: Use my soyrizo and a plant based eggs. or any egg replacer that you like).

How to Store

  • Fridge: Store leftover chorizo and eggs in an airtight container for up to three days.
  • You can also freeze chorizo con huevos. You can make burritos and freeze to eat on the go! Defrost overnight in the refrigerator and heat in the microwave for a minute at the time until heated thru.

Serving Suggestions

To make chorizo con huevos a full meal, serve it with a side of refried beans and either warm corn tortillas or flour tortillas. Even though it already has veggies, topping it with a good salsa will be the perfect touch!

Need more ideas? Make burritos, breakfast tacos, breakfast tostadas, quesadillas, or add it to on top of tlacoyos. However you decide to have them, they will be a hit!

FAQs

What is the difference between huevos rancheros and huevos con chorizo (Mexican eggs)?

Huevos Rancheros are fried eggs served on soft crispy corn tortillas, topped with a flavorful salsa. The sauce is often served with beans and rice, creating a hearty and satisfying breakfast that will fuel you up for the day ahead.

On the other hand, huevos con chorizo is a slightly more indulgent dish. This dish typically consists of scrambled eggs mixed with Mexican chorizo plus other optional ingredients. The eggs are often served with warm tortillas, refried beans, and a sprinkle of crumbled queso fresco for added richness.

Came out perfect! Only used a little bit less chorizo, 6oz instead of 10o z and it was perfect. However if you want it more meaty you can go with the 10oz.
