Today I have for you this delicious recipe for Huevos Con Chorizo (scrambled eggs and Mexican chorizo). As many of you may know, breakfast has always been my thing, mostly because I love eggs! This is one of my favorite dishes to make since it’s easy and always so satisfying.

It’s good to have ready made chorizo in the freezer for those days that you get the craving for a hearty breakfast. For a vegetarian option, make it with Soy Chorizo.

How To Make Huevos Con Chorizo

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the chopped onion and jalapeños to the skillet and cook for 2 minutes, stirring occasionally.

  • Use a nonstick pan: To prevent the eggs from sticking to the pan, make sure to use a high-quality nonstick pan. It also helps reduce the amount of oil in a recipe.
  • Use a silicone or wood spatula: A silicone spatula works great to sweep the eggs as they cook. A flat wooden spoon works great too though!
  • Don’t overcook your eggs! The eggs are done when they are no longer liquid, the curds are large and clumped together, but they still glisten with a little moisture.
  • You may adjust the number of eggs and the amount of chorizo depending on preference.

Fridge:

  • Store leftover chorizo and eggs in an airtight container for up to three days.
  • You can also freeze chorizo con huevos. You can make burritos and freeze to eat on the go! Defrost overnight in the refrigerator and heat in the microwave for a minute at the time until heated thru.
  • To reheat, melt some butter in a pan over medium low heat and reheat for a couple of minutes. This can also be reheating in the microwave for a couple of minutes depending on the amount of leftovers you have.

Variations

  • If time allows, I like to make crispy potatoes in the airfryer or in a skillet. Then I add them before I add the eggs to the chorizo.
  • Add chopped cooked bacon.
  • Garnish: Add more layers of flavor with avocado slices and/or cheese.
  • Make it vegan: Use my soyrizo and a plant based eggs. or any egg replacer that you like).

  • cup chopped onion (about ¼ medium onion)
  • 2 jalapeños chopped
  • 10 ounces chorizo (homemade or store bought) you can add more or less according to taste.
