It’s good to have ready made chorizo in the freezer for those days that you get the craving for a hearty breakfast. For a vegetarian option, make it with Soy Chorizo.

- Add the chopped onion and jalapeños to the skillet and cook for 2 minutes, stirring occasionally.

- If time allows, I like to make crispy potatoes in the airfryer or in a skillet. Then I add them before I add the eggs to the chorizo.
- Add chopped cooked bacon.
- Garnish: Add more layers of flavor with avocado slices and/or cheese.
