Potatoes is one of my fave veggies not only because of its versatility, but also how quick and easy it is to cook! It takes to so many different forms of cooking depending on your desired texture—crispy, slightly crunchy, mashed, or steamed. You can toss these babies in any Mexican dish to add volume and flavor!

1. Tacos Dorados

These crispy tacos are filled with a mixture of seasoned mashed potatoes (and meat if you prefer), creating a satisfying contrast between the crunchy exterior and the creamy interior. Enjoyed with a simple salsa and all of your favorite toppings.
