Paletas De Tamarindo (Tamarind Popsicles)

My love for tamarindo goes waaay back to when I was little. I probably began to eat spicy Mexican candy when I was two years old lol! 

See, in Mexico, most spicy candies are made of some kind of tamarind mixture, sugar & chili powder.  As far as I can remember, I’ve been addicted to this stuff along with anything made with it: agua de tamarindo, raspados, candy & paletas.

Ingredients

Tamarindo Pulp: Making Paletas De Tamarindo is easy once you have the tamarind pulp made ahead. Use as much as you want but start with about 1/4 and add more according to taste. The pulp is very acid so adjust the amount once you add the sugar and mix all ingredients.

Sugar: I use white sugar in this recipe so as not to compete with the fresh flavor of the pulp.

Water: with 3 cups of water it will yield 10 popsicles in these types of molds. You may have to adjust the quantities if using bigger molds.

How to Make Paletas De Tamarindo

Overall this is easy to make and the most time consuming part is removing the shell from the tamarindo pods when making the pulp.

  • In a jar or large bowl, add the tamarindo pulp, water and sugar.

I used this popsicle mold but you can use anything you have! Even small paper cups will work.

  • Pour paletas mixture equally into molds and freeze for at least 6 hours or up to 2 weeks. Sprinkle with chili lime powder if desired.
  • Note: If adding chamoy and/or chili lime powder to the popsicles, do this step prior to pouring the tamarindo mix in the molds.

  1. It’s great that I found you and all your wonderful interesting recipes.

    That seems like a lot of water in these. I made similar ones last week with strawberries and they came out like ice cubes on sticks. I’m looking for the texture like the Mexican fruit popsicles I get at the local bodega. Seeing as I have a brick of tamarind, tamarind margaritas are next.

    I have some gummy bear molds lying around.I figured it would make a good frozen treat for kids.Would this mixture work for the molds(or will it be too pulpy)?
