Most of the time I eat the same breakfast everyday but once in a while I like to change this up and that’s when I eat this Greek yogurt parfait or protein pancakes.

And when kiwi and fresh fruit season is in full swing, we need to take advantage of this fuzzy brown fruit that is a great source of fiber and vitamin C! Pair the sweet yet sharp flavor with other fruits such as bananas, berries and even in a salsa to serve alongside spicy dishes. I bet you didn’t think about that one 🙂

How do you know when the kiwi is ready to eat? It should be firm but yielding when gently squeezed. If it needs more ripening, try putting it in a paper bag with a banana to speed up the process. Just like you do with an avocado!

In this recipe I use nonfat Greek Yogurt to keep the protein high. We mix it with some lime zest plus my favorite sweetener. This is the base to layer with the crunchy granola and your favorite fruit.

Ingredients

  • Kiwis and/or your favorite fresh fruit like blueberries, raspberries, blackberries, pineapple, mango and peaches.
  • The Yogurt: For the best protein ratio, use nonfat plain Greek yogurt. Save your carbs for the granola and fruit!
    • Substitute with your favorite yogurt.
  • Lime zest. This adds the perfect citrus taste to the parfait.
  • Honey, maple syrup or preferred sweetener.
  • Granola: Use store bought or homemade granola.
  • Mint sprigs for garnish. Optional.

Optional Add-ins

These optional add-ins will make this yogurt parfait a feast!

  • Add cinnamon or a dash of vanilla to the yogurt.
  • Sprinkle chocolate chips, coconut flakes, chopped pecans, almonds or your favorite nuts.
  • Add a layer of peanut butter or nutella.

How To Make Greek Yogurt Parfait

  1. Start by prepping the fresh fruit by cutting it into small bite pieces.

  1. In a blender, puree half the diced kiwi or fresh berries. Set aside.
  2. In a small bowl, mix the nonfat Greek yogurt, lime zest, and honey.
  3. Fold the pureed fruit into the yogurt mix.
  4. Layer the yogurt, granola and remaining diced kiwi or fresh fruit in small glasses or mason jars. Then sprinkle a little chopped mint on top of each fresh fruit layer.
  5. Add more fresh fruit for the last layer and serve immediately.


How to Store

  • Fridge: Store these yogurt parfaits in an airtight container in the fridge for 2-3 days. If stored already layered, the granola will become a little soggy but the flavor will still remain the same. If you want your granola to remain with a crunchy texture, build the layers right before you eat it.
  • Freezer: not recommended.
