Who says Mexican food can’t be healthy? Many traditional Mexican dishes are naturally packed with fresh ingredients and full of flavor while staying low in fat and calories. It’s all about choosing the right recipes and keeping things balanced.

To kick off the New Year, I’ve rounded up my top 29 healthy Mexican recipes that are simple to make at home. Each one is made with fresh ingredients, light on calories, and big on taste. I didn’t even include my collection of salsas that are always healthy like my Salsa Mexicana & Chile Guajillo.
I think it’s safe to say that Mexican food is on everyone’s list of favorite foods. But unfortunately, it has gotten a bad rap due to how it’s prepared in the United States and other parts of the world. Nutritious & healthy Mexican food is possible if you just stay away from frying it or loading them with cheese!
All you need to create delicious & healthy dishes are lots of veggies, fresh spices and lean meats.
1) Shrimp Ceviche
One of my most popular Mexican recipes on the blog – this Mexican Shrimp Ceviche is made with accessible ingredients that can be made with frozen shrimp if you don’t have fresh near by! It’s low-fat, gluten-free and has incredible flavor!
2) Sopa De Verduras
Sopa De Verduras is one of my favorites because it’s so healthy and delicious! Use whatever vegetables you have at hand but I do recommend you incorporate most of them. I know you’re going to love this vegetable soup!
It’s low-fat (almost fat-free!), gluten-free, plant-based, vegan, vegetarian and 100% delicious!

3) Lentejas (Mexican Lentil Soup)
Sopa De Lentejas is a popular Mexican soup that is healthy, delicious and ready in 30 minutes or less. It’s full of flavor! You can’t go wrong with a big warm bowl of lentil soup.
It’s high in iron, low-fat, gluten-free, plant-based, and vegan & vegetarian adaptable.
4) Calabacitas (Mexican Style Zucchini)
Calabacitas is a delicious and healthy side dish recipe, perfect for any meal! It just might be the Best Healthy Calabacitas Recipe I’ve ever had. This side dish is good enough to eat on its own, but it pairs well with other Mexican recipes.

5) Shrimp Aguachile
Aguachile is closely related to shrimp and fish ceviche and if you like sushi or poke bowls, I guarantee you will love this healthy & fresh recipe! Make it as an appetizer or the main meal

6) Champiñones (Mexican Style Mushrooms)
Champiñones -a fast and easy vegetarian weeknight dinner! Serve it with refried beans (which my recipe is also low in fat!) for a complete meal. One of my personal favorite Mexican recipes!

7) Frijoles Charros
Hands down, the best Frijoles Charros Recipe! It’s rich, hearty and so flavorful! The beans are perfectly tender, served as a side or as a main dish. It’s a comforting meal in a bowl, that’s bound to please!

8) Veggie Tacos
These Vegetable Tacos are so fresh and delicious with just the right amount of spices. The veggies are super healthy and can be enjoyed in many ways! You can grill them, roast them or even sautéd in a skillet.

9) Tlacoyos
