Seafood Tacos Recipes

What’s the best kind of fish for Tacos?

Any type of white fish is the best kind for frying with batter. I recommend cod, halibut, tilapia or snapper. Make sure the fillets are not thicker than 1 inch or they will take too long to cook.

Frozen fish will work too if you don’t have access to fresh fish. Normally frozen fish gets frozen right after they’re caught!

Ingredients 

For The Dressing

  • ¼ cup red onion - chopped
  • 2 large fresh garlic cloves - minced
  • ½ cup fig spread or jam
  • ½ cup white balsamic vinegar
  • 1 cup extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

For The Salad

  • 6 cup chopped lettuce (romaine, arugula, etc)
  • Berries
  • ½ cup shaved parmesan
  • ¼ cup praline walnuts - chopped

Instructions

Make the dressing:

  • In a food processor, add all ingredients except the olive oil. Blend until smooth.
  • Transfer the dressing to a medium bowl then add the olive oil slowly while whisking the dressing to emulsify.

Salad:

  • Assemble the salad and serve with the balsamic fig dressing.
  • Store the dressing in a sealed container for up to a week.

Notes

  • Salad dressing makes makes 16 oz.
  • Calories only include salad dressing.
